Ingredients you need for the Potato Gnocchi in Bacon Spinach Cream Sauce
1 pound (450g) gnocchi2 strips of bacon1 tablespoon butter2 shallots or1 small red onion, minced2 or 3 clover garlic, minced1 teaspoon red chili pepper flakes to taste, optional1 teaspoon Italian seasoning1/2 teaspoon salt and fresh cracked pepper1 large tomato, diced3/4 cup vegetable or chicken stock1/2 cup heavy cream1/2 cup parmesan, grated2 cup fresh spinach1/4 cup basil leaves, for garnish
Directions
1. In a large pot of boiling water, cook gnocchi until they float to the surface. Drain immediately and set aside without covering.
2.In the meantime, saute the bacon in a skillet until crisp. Remove to a plate and discard the extra fat but keep the brown bits.
3. In the same skillet over medium heat, saute minced shallot (or onion) and garlic in one tablespoon butter until fragrant. Add gnocchi and gently brown them on all sides for 5 minutes. Season lightly with Italian seasoning, salt and pepper, and red crushed chili pepper, if using.
4.Add diced tomato, cook for one minute, then stir in chicken or vegetable stock. Bring sauce to a low boil and simmer for 1-2 minutes, add cream and grated parmesan and cook for one-minute stirring continuously until smooth.
5. Stir in spinach, let it wilt, and add bacon back to the skillet. Adjust seasoning and serve immediately, garnish with basil leaves and garnish with grated parmesan.Enjoy!

How to cook gnocchi for dinner
Gnocchi is a delicious Italian dish, principally made from potatoes and flour. There are many different ways to cook gnocchi:
- One of the simplest and most popular is to simply boil the gnocchi in a pot of salty water for a couple of minutes until cooked through. Once cooked and drained, you can dress the gnocchi with your favorite sauce and cheese.
- You can also sauté the cooked gnocchi in butter or olive oil. This gives the gnocchi a nice crispy texture with a chewy interior. You can add vegetables, herbs, and spices to the gnocchi in the pan to make a delicious meal – a bit like a stir-fry.
- For a more decadent dish, you can bake the gnocchi in the oven with some sauce and cheese. This creates a creamy, cheesy dish that is sure to be a hit.
