An Easy Frosted Sugar Cookie Recipe

Am I the only person who feels like summer is slipping through their fingers? Oh the plans I had! Oh the fruit salads I was going to make! Oh the vacations…

I mean, I do understand it’s barely July and there is a whole lotta dog days left. But it feels like September is closing in on me. Maybe it’s because my boys are getting a little older, and I realize that these free summer days, with nothing on the schedule, are fleeting, certainly.

I need to really focus on being in the moment. This moment. This 2017 July moment. Savor it, because soon it will ACTUALLY be September, my tan will be fading and strawberries will no longer be in season, and my 11 year old will most likely be taller than me.

Focus, Shelly. Summer. Do it right, please.

And maybe have a sugar cookie. Your summer bod never happened either 🙂

So let’s focus on the recipe of the day. This pressed sugar cookies recipe is pretty much a dream come true. I posted about them a MILLION years ago on Instagram, when I made them for my kids as a treat…but you all seemed interested in the recipe. I got you.

And I made a little video to show you how easy these sugar cookies are to make!

How to Make these Frosted Sugar Cookies

This is a very easy cookie recipe. The trick to these is the combination of vegetable oil and butter. AND a combo of granulated and powdered sugar. Trust me on this.

The sugar cookie dough might seem a little dry, which is also ok. Believe in the process.

Use a large cookie scoop for these. Because large cookie scoop = large cookie. And that’s me.

Just drop the scoops of dough onto a baking sheet and use a glass and press down the center before you bake. The edges will crack a bit, but again…totally fine…it’s actually kid of the beauty of the cookie.

Then you must make frosting. It’s the rule. Because sugar cookies with frosting > sugar cookies without frosting.

Go ahead and leave your sugar cookie frosting white…and sprinkle it up…

FAQs

What is the secret ingredient to keep cookies soft? ›

If you enjoy your cookies soft and chewy, chances are likely the recipe contains a common ingredient that serves a very specific purpose. No, it's not granulated sugar, nor the butter. It's not the egg, all-purpose flour, or even the vanilla extract. The simple, yet oh-so-necessary component is cornstarch.

What type of cookie is pressed? ›

Pressed cookies are made from soft dough that is extruded from a cookie press (cookie gun) or pastry tube into various decorative shapes much like cake decorating with frosting. Spritz cookies and butter cookies are good examples of pressed cookies.

How do you make cookies chewy instead of crunchy? ›

What ingredients make for a chewy rather than a crunchy cookie? - Quora. Eggs, brown sugar and a fat mix of 50/50 butter and shortening are some of the ingredients that will help make a cookie chewier. Also, fluff the flour with a whisk before measuring it — too much flour will make a cookie dry.

What is the secret to using a cookie press? ›

If it's too cold, it'll be hard to squeeze out of the pres. If it's too warm, it'll be too soft, and it won't hold its shape when baked. Holding your hand on the tube will warm the dough, so try to use just one hand on the trigger – place your other hand on the cookie sheet to keep it from moving.

Should I use baking soda or baking powder in cookies? ›

Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies. Since baking powder is comprised of a number of ingredients (baking soda, cream of tartar, cornstarch, etc.), using it instead of pure baking soda will affect the taste of your cookies.

How do bakeries keep their cookies soft? ›

Corn Syrup (Light)

Light corn syrup is sometimes used in specialist cakes and confectioneries to help keep baked products soft and doughy for longer.

What keeps cookies soft and chewy? ›

Use Brown Sugar

Add two tablespoons of light or dark brown sugar to your cookie recipe. Brown sugar can hold extra moisture because of its molecular structure (science!). The glucose and fructose found in it are hygroscopic, which means they suck up and hang onto moisture and moisture = soft, chewy cookies.

Do you press cookies before or after baking? ›

Flatten your cookies with a spatula when they first come out of the oven for perfect cookies every time.

How do you get dough out of a cookie press? ›

Pump the handle on the cookie press to press out the dough.

Depending on your cookie press, you may need to pump the handle more than once to get enough dough to come out. If your cookie press doesn't have a handle or lever to pump, press down on the plunger instead.

What is the difference between a cookie cutter and a cookie press? ›

Cookie cutters create shapes by altering the edges of the cookie. Cookie presses can do the same thing, but they also make cookies more intricate.

Do you press cookies before baking? ›

Certain cookies — Sugar Cookies, Snickerdoodles, Classic Peanut Butter Cookies — need to be flattened a bit before they bake, lest they end up emerging from the oven looking like ping-pong balls rather than typical flat, round cookies.
