I made these today. Doubled the recipe and used 9×13 pan. I substited 1 cup white sugar for 1 cup dark brown sugar along with the white. Gave them a caramel flavor and great tasting. This is now my go to recipe for brownies.

I made these as written the first time and they were great. The second time I threw in 2 Tbs of espresso and a handful of chopped 70% chocolate. These were more fudgy than cake like. They disappeared fast! Thanks for sharing a simple one bowl recipe!

This is my forever go to brownie recipe. It’s so simple and they’re so perfect. I like to bake them in a big if a bigger pan so they are a bit thinner…add chocolate chips, then refrigerate before cutting them. They end up so fudgy!

I made these today and they are so good! I even made them keto-friendly by using the home made keto flour mix as seen on YouTube. Subbed the sugar for no carb sugar. Frosted them just a little and…YUM! Thank you! Haven’t had brownies in a while and these were not only good, but easy!

This isn’t the best brownie recipe I have made, but the whole family enjoyed them – it is quite good, economical, and very easy with no need to melt chocolate. I used 1/4 cup butter and 1/4 cup canola oil, and mixed it all up in a 1 quart glass measuring cup.
Next time I might try to make them a little denser/more chocolatey by using less baking powder, replacing one of the eggs with 1/4 cup yogurt, or using slightly more cocoa.

FAQs

Do you put baking powder or baking soda in brownies? ›

Many brownie recipes don't contain baking powder or baking soda; these recipes tend to be for the dense, sometimes chewy, kind. Cakelike brownies usually contain a leavening agent, which helps give them their fluffy texture. The technique you use also makes a difference in the texture of the final product.

How to make brownies better? ›

One change is to use milk or heavy cream instead of water. This change will make brownies more moist and gooey since milk is more fatty and flavorful than water. A second change is to use butter instead of oil. For similar reasons to using milk, butter adds a rich and more decadent quality to the batter.

What makes a brownie more fudgy? ›

Fudgy brownies have a higher fat-to-flour ratio than cakey ones. So add more fat—in this case, butter and chocolate. A cakey batch has more flour and relies on baking powder for leavening. The amount of sugar and eggs does not change whether you're going fudgy or cakey.

Which sugar is best for brownies? ›

Using caster sugar in brownies also helps to get a super crinkly top. Caster sugar has a smaller grain size than granulated sugar, so it dissolves better in the egg mixture, to give that nice crinkly top. If you only have granulated sugar on hand it will still work fine particularly if you are in the US.

Should you put baking powder in brownies? ›

Adding baking powder or baking soda lifts brownies up and creates a cakier result. But today, we all want a brownie so dense and fudgy that it's basically 1 step up from eating pure chocolate. You'll get a taste of how dense these brownies are when you're mixing up the batter. It's so thick and so fudgy.

What happens if you add too much baking powder to brownies? ›

Too much baking powder can cause the batter to be bitter tasting. It can also cause the batter to rise rapidly and then collapse. (i.e. The air bubbles in the batter grow too large and break causing the batter to fall.) Cakes will have a coarse, fragile crumb with a fallen center.

What happens if you use baking powder instead of baking soda in chocolate chip cookies? ›

Baking soda is generally about three times stronger than baking powder, so adjust your recipe accordingly. Baking soda and baking powder can produce cookies with different textures. Baking soda is typically used for chewy cookies, while baking powder is generally used for light and airy cookies.

Why do you put baking soda in brownies? ›

Baking soda helps to produce a dense, fudgy brownie. Chocolate chip cookies. Baking soda will help the cookie dough spread and create a delicious, chewy texture. Irish soda bread.

Does brownie mix have baking soda? ›
