The Meatza Pizza Crust

Is it meatza or meatzza? Does it really matter?

Ever since my intermittent fasting experiment, I have been exploring how I feel eating more of a low carb diet. You can read more about my intermittent fasting results here.

This meatza recipe came about because pizza really sounded good and I wondered how to make a low carb pizza without a cauliflower crust.

Enter meatza (or meatzza), the pizza recipe where you make the crust out of the meat itself!!

The crust for this meatza uses a mixture of beef and pork for amazing flavor. It’s seasoned with some simple spices and only takes a few minutes to mix together.

The flavor turns out tasting like an Italian meatball and when you add on the toppings it’s oh so tasty.

Tips for making this meat lovers pizza

Since making the crust out of ground beef and pork is kind of unique, here are some tips:

  • First, mix all of the crust ingredients in a bowl. Don’t overmix.
  • Using your hands, spread the crust into a thin, even layer on a 11×17 sheet pan.
  • Press hard with your palm to even out any thick spots in the crust. You’ll want to press and press to get the crust out to the edges of the pan.
  • After the crust has cooked for 15 minutes, it will shrink down and release fat. You can carefully pour off the fat from the pan if desired.
  • Add your toppings and cook for 10 more minutes before cutting into slices and serving.

Low carb pizza toppings

Since the meatza crust is so rich and filling, we kept the toppings pretty simple for this recipe. Here’s what we used:

  • A simple marinara sauce (no added sugar)
  • A few slices of red onion
  • Green bell peppers
  • Black olives
  • Sharp cheddar cheese

Keto pizza sauce

Since a lot of store bought sauces have added sugar, we always use a no-sugar sauce. We also only use about 1 cup of sauce for the entire pizza, so it keeps the carbs per serving low. Here are a few good options we’ve found for no sugar pizza sauces:

Ingredients

For the crust:

  • 1 lb ground beef
  • 1 lb ground pork
  • 1/3 cup almond flour
  • 2 tbsp Italian seasoning
  • 1.5 tsp garlic powder
  • 1.5 tsp onion powder
  • 1 tsp sea salt
  • 1 tsp ground pepper

For the toppings (or sub whatever toppings you prefer):

  • 1 cup marinara sauce
  • 1/4 cup olives, sliced
  • 1/4 bell pepper, sliced into thin strips
  • 1/8 red onion, sliced into thin strips
  • 2 cups shredded cheese, (optional, omit for strict Paleo or Dairy free)

Instructions

  • Preheat oven to 400° Fahrenheit. To make clean up easier, you can line your sheet pan with parchment paper. Use a sheet pan with a lip as the crust will release fat while cooking. A 12 x 17 size pan is best for this recipe, as it will force you to spread the crust out nice and thin to reach the edges of the pan.

  • Add all of the crust ingredients to a large bowl and mix well to incorporate all of the ingredients evenly (we use our hands).

  • Spread the meat out on the baking pan and form it into a thin, even layer. Shape it into a circle if you wish or you can make a square pizza. Just try to spread it out evenly, about 1/4 to 1/2 inch thick.

  • Place in the oven to bake for 15 minutes, or until the meat is cooked through. It will shrink and release some fat.

  • Remove from the oven and carefully pour off the fat from the pan. Add the toppings to your pizza. Start with a base of sauce spread out in an even layer over the crust. Add the remaining toppings as desired.

  • Place in the oven to cook for 10 more minutes.

  • If desired, turn the oven to broil and broil for a few minutes to brown the toppings a bit (optional).

  • Remove and allow the meatza to cool for a few minutes. Cut into pieces and serve.

Looks delicious but I can’t help but think, this pan is toast! Ugh, I don’t look forward to cleaning this….

That’s just an old pan in the pictures. The meatza actually has enough fat in it that it doesn’t stick to the pan much. You could also grease the pan first or line it pan with parchment for easy cleanup, that’s what we typically do.
